Another obsession...

I cannot believe we're almost through June already. Can you?! Bananas. I've been very busy at work, so my apologies for not posting as much. Let's start with a quick recap of last week and the weekend. I can't remember just when I ate/did all of these, but I think my food is pretty, so I'm sharing anyway.





2 egg white + 1 yolk + kale + sweet tater =

YUM.

And a good, clean jumpstart meal. I've been feeling a little off balance with my eating, so this helped me to jump back on the healthy train.





Random leftover salad with a new Green Goddess dressing from Trader Joe's. 

Verdict?

Awesome.





I made this recipe without the taters. Ground turkey with sautéed kale. 

It was awesome. The boy had it inside some crispy tacos with toppings and I threw some salsa and avocado on top.








My salsa du jour. 






Proof that I actually work out. Yay.

And no, I didn't ask someone to take this. I promise. It was a sneaky shot taken by my trainer.




Oh man, these are so good and easy. 

These are apple streusel muffs from Balanced Bites/Practical Paleo. They are super delish and I use them as a snack with a little peanut butter/almond butter. 

You should absolutely try these.




I was obviously feeling very carby this particular morning, so I had gluten free toast with peanut butter and a nanner. 

I made a little pb sandwich with the rest of the nanner by slicing it lengthwise and spreading some buttah in there.

'Twas splendid.










Remember last week when I told you about Hu Kitchen?

Well, I went again on Saturday after doing Run Club with a friend.

I ordered the Socca wrap with egg whites, veggies, and sweet potato hash with a side of beef bacon.




Socca is sort of like a pancake or crepe made of chickpea flour. I had never had it before, but it was absolutely incredible. I couldn't stop exclaiming loudly how much I liked this thing.

Also, Hu Kitchen makes pretty much everything in-house. Including the ketchup and hot sauce you see on my plate.  





I obviously didn't need it, though, because everything was amazing as it was.

I cleaned my plate like a good girl.

My friend also destroyed her chicken and veggies.

High fives all around.
